First I made the Eggnog which was a half quantity mix of the Indulgent Eggnog from Eggnog Recipe Collection. This gave me about 800ml of Eggnog minus the alcohol. I only needed 1 3/4 cups of Eggnog so there was plenty left for me to drink
I heated 1 3/4c of eggnog minus the alcohol just warm enough to melt 400g of white chocolate. When the ganache was nearly cold I added the alcohol and put it in a tray in the fridge to firm up.
That’s when it all went to custard (literally). Fortunately I have some chocolate molds so the day and the truffles were saved. Phew!
Regardless of what shape they are in they taste delicious.
